Hand-picked without additions. Whole bunches and destemmed whole berries were transferred to a single open oak fermenting vat. The base of the vat was lined with the whole bunches (20%) and then topped up with whole berries. Fermentation was indigenous and left alone with little cap work, relying upon carbonic maceration for extraction. Pressed at dryness to new and used 228L tight grain French barriques for 10 months– 25% new, 75% older. Bottled by gravity with no fining or filtration. Made without animal products. “Pretty, voluminous perfume, loaded with sweet red berry fruits, spiked with green herbs, undergrowth, briar, touch of truffle/mushroom. Silky in the palate, great volume of flavour, squeakiness through the finish, mouthwatering too. Has good concentration, mouth perfume even, floats through its long finish.
