From the same vineyard as the Gippsland Chardonnay; guided through the winery to show maximum regional expression, has dark fruits and savoury finish. The fruit is sourced from their own vineyard in Gippsland. The wine is destemmed without crushing and left on skins for 25 days. Using a mixture of natural and cultured yeast to achieve a balance between fruit and complexity. The wine is bottled without filtration or fining.
