Fruit is harvested and pressed immediately. Juice is settled overnight and racked to small casks and allowed to ferment with indigenous yeast. The casks get a little stirring of lees at the end of fermentation and undergo malolactic fermentation to give creaminess and complexity.
Pale salmon in colour. Delicate, brioche, strawberry, gently aromatic. Dry, creamy red fruits, textural, persistent and seriously delicious.
“(Very) pale salmon colour. Strawberried aromas blaze from the glass. Apple, rosewater and strawberry flavours drive through the palate in fine, dry style. This spends time in old oak, albeit briefly, though there are certainly no signs of oak flavour.
