The Yarra Valley’s very own opera Dame Nellie Melba, enchanted the world as Mimi in Puccini’s La Boheme. The famous opera is based in the characterful Latin Quarter of Paris, which these days is full of artisan wine bars and bistrots serving interesting and quirky wines from all over the world.

A mixture of whole bunches and whole berries with some early foot stomping to create some juice to start the fermentation. A combination of foot plunging and turnovers during fermentation. Pressed and racked to 500 litre casks for 4 months. Syrah 81%, Gamay Noir 19%
