Marmont Vineyard, Blewitt Springs. planted in 1960.
This was the first hand pick on the 10th of March, ten days earlier than the Springs Hill Shiraz. We tipped 22% whole bunches into the 132yr concrete open prior to destemming & chilling the remaining fruit, whole berry on top. Plunged once daily with dry ice whilst cold soaking until indigenous ferment took off on day 4. From here plunged twice a day until zero baume then we jumped in and hand squeezed all the whole bunches to release the beautifully aromatic carbonic ferment characters back into the wine. Another 3 days on skins and pressed to tank, 17 days on skins. Racked with fluffy lees to 16yr old French puncheons for natural malo and 10months maturation. Beautifully aromatic with signature grace & a very tight and fine line of tannin. Bottled with sulphur only in early February 2021. Vegan friendly. – Source Winery
