Reserve Bin A Chardonnay has evolved into a wine that is now a distinctive, single-region style in its own right, with a contemporary and distinctive Adelaide Hills Chardonnay persona. All fruit is hand-picked into small bins and then whole-bunch pressed. A portion of the juice is incrementally filled to barrel directly from the press and allowed to undergo a natural fermentation, sans inoculation. Every new and seasoned French oak barrique is its own unique 225-litre ferment. Enhanced mouthfeel and complexity is achieved by fermenting and maturing on solids. 100% malolactic fermentation (all natural).
“Over the past 10 years this wine has (I suspect) won more gold medals than any other Australian chardonnay (Yattarna isn’t entered in shows). Apart from maturation in French oak at 10 degrees C or less, the magic lies in the fruit and ultimately barrel selection, and I can see no reason why this thrilling wine won’t add to its medal collection. It has a diamond-like intensity and purity to the fruit flavours, natural acidity and new French oak observers from the wings.” – 97 Points & Special Value Wine James Halliday
“A whirlwind of a wine, the nose here has candied citrons, limes and white spring flowers that combine with a flinty edge of sulphidic complexity before opening to white peaches and nectarines. This is really elemental, pared back and restrained — an infant of a wine with much to come in time. The palate has a core of very pure, deep-set, citrus-focused fruit that’s really focused around grapefruit. There are some subtle hints of honey and spices, and it turns savory through the latter phases and gently nutty. It’s also gently grippy, nicely layered and very long. There’s measure and restraint for all the richness; it’s a cleverly composed iteration of an outstanding Adelaide Hills vintage. Give this until 2019 to build in bottle.
