The grapes for The Sabre are from some of the oldest and best sited Pinot Noir vineyards in the high cool comate Lenswood and Piccadilly subregions of the Adelaide Hills. Tim works with his growers to produce moderate yields of fruit, well exposed to sunlight to maximise colour and ripe flavours.
2014 was a year of light crops, much like 2012 and again mainly due to poor set that produced light bunches, often with ‘hens and chickens’. This effect mixes full size berries on the bunch with miniature unseeded berries and although it reduces the crop size, it can have a positive effect on colour and concentration by increasing the ratio of skins to juice.
