The 2017 Shiraz is sourced from 2 vineyards positioned quite close to each other in the cooler, elevated viticultural district of Blewitt Springs in McLaren Vale. Both sites were planted in the early 1960’s and grow in free draining soils, consisting of eroded sandstone over ironstone clay.
Both blocks were picked at quite different times and baumes to achieve individual outcomes at the fermenter. The first parcel of fruit to arrive was early picked for vibrancy and freshness. Then handsorted and destemmed 90% of this Shiraz, leaving a sprinkling of whole bunches on top of a single open fermenter. The second vineyard’s fruit was delivered a week later and a touch riper. This parcel provided depth of flavour and was processed using 20% whole bunches and fermented with wild yeast.
